Rosey Ridge Farm is bringing grass-fed meat to the Grand Prairie Farmers Market this weekend, marking the first time this family-run dairy is venturing into the grass-feed meat market.
The farm, which is located near Grandview, approximately 35 miles south of Fort Worth, is a Retail Grade A Dairy and sells milk and other dairy products, including Raw Aged Cheese. "Our grass fed beef is grown the all natural way," according to Eldon Hooley who runs the farm with the help of his wife, Lisa, and their seven children. "The cows are grazed on native summer grasses and winter oats, wheat, and rye. Our 250 acre farm consists of diverse terrain comprising meadows, open pasture, woodlands and wetlands growing many different species of grasses including Buffalo grass, switchgrass, goosegrass, crabgrass, johnson grass, and other wild native grass and prairie grass," he added.
Another recent addition to the farm's product line is an aged, marinated feta cheese. The cheese is soaked in olive oil spiked with sun dried tomatoes and basil for at least 30 days, according to BethAnn Hooley, the resident cheese maker at the farm. That’s after the cheese itself has been aged for 30 days. The result is hugely flavorful and can be used as an hors d'oeuvre (just add some toothpicks) or-- with a few of the cubes crumbled—a rich salad dressing.
