    Recipe of the month

 


 

Corn Muffins


  • 1-1/4 cups cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/3 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 3/4 cup vegetable oil
Directions
  • In a bowl, combine cornmeal, flour, sugars, baking soda and salt. In another bowl, beat egg, buttermilk and oil; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 425° for 12-15 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack. Yield: 1 dozen.

    Hello, everyone! I hope everyone is enjoying this Thanksgiving season. Every season is opportunity for thankfulness and we should always be grateful for life as we have it even if we don’t always understand everything about our life..... kind of hard, right? But not impossible!

I’m sure there are a few less turkeys around but it didn’t make any difference at our house since we didn’t grow turkeys this year. We had some very good steaks I’m glad you didn’t buy or we wouldn’t have had them. They showed up on the table at suppertime on thanksgiving day. We worked all day and had our big meal in the evening. It was good! Lip smacking! Fixed by the best cook in Texas!!

It is dry as a bone. I’m talking about a bone that has been dead for years. Powder dry. I’m talking about dry powder that hasn’t got wet. It’s dry as the Sahara desert. I’m talking about where it’s dry because of no rain and the winds blowing. Real dry. Not enough moisture except for a cactus and they hurt!

A friend of mine had a cow die so I hauled my tractor over to his place and dug a hole and buried it. I went down 5 feet and it was dry all the way down. No moisture anywhere! That’s dry!! So we’ll be thankful that we baled quite a bit of hay this year and pray for rain! I’m also thankful the sweet potato pie we had for thanksgiving wasn’t dry. Neither were the steaks and roast and the coffee. The popcorn was dry but it’s better that way. I don’t think our thankfulness should be dry either! We are blessed in so many ways! The love of Jesus, family, friends, good customers like you, a warm house, warm clothes, plenty to eat, health, and all the good feelings of having our sins forgiven because of God’s great love! Because of that, we want to obey Him in all things. He gave His Word so we can know His will. Let’s obey and praise Him for His goodness!

We’re sprouting seeds for the cows and chickens. It’s not enough for their whole diet but at least we’re making a stab at it. It’s very healthy and the digestibility is very good! I’m hoping we can get set up to make it a viable part of our operation. It has some wonderful possibilities.
