Of all the grains that you can make part of your diet, few can be prepared as quickly and easily as quinoa. Make sure you buy pre-packaged quinoa. The raw stuff has a bitter coating that acts as an insecticide.
- 3 cups stock (vegetable, beef or chicken depending on what you’re serving the quinoa with).
- 1 ½ cups of pre-packaged quinoa ½ tablespoon salt
Thoroughly rinse the quinoa in a bowl of cold water. Pour the stock into a saucepan and bring it to a boil. Add the quinoa and salt. Bring the mixture to a boil and reduce the heat to a simmer. Simmer for 15 minutes. Remove from the heat and let stand for five minutes. Fluff with a fork and serve.
An Extra Touch: Stir in your favorite seasonings to the fluffed quinoa like sautéed minced onions, garlic and mushrooms; or stir-fried scallions, snow peas and ginger flavored with a little soy sauce. Be imaginative.
